How does PostFrame know an email was delivered?

The provider sends a delivery notification when the receiving server accepts the message. PostFrame verifies it, moves the email to delivered, stamps the time, and stores the SMTP response.

What is the difference between sent and delivered?

Sent means the provider accepted the message from PostFrame. Delivered means the recipient's mail server accepted it from the provider. Both are separate statuses with their own timestamps.

Where can I watch deliveries happen?

The Logs page lists every event as it arrives — sent, delivered, opened, clicked, bounced — with the recipient and subject, and the Emails page shows each message's current status.
